• 150g of stilton
  • 1 large head of broccoli
  • 1 onion
  • 1l of stock (veg)
  • 1 large peeled, cubed potato
  • optional - some soya/regular cream (depending on lactose tolerance)

5 ingredients, 20 minute lunch. Makes enough for 3-4. Ridiculously easy.

From this recipe. I’d add more broccoli and seasoning (pepper, especially).

Soften the onion

add potatoes and stock, and simmer for about 10 mins (until potatoes are soft)

add broccoli and simmer for a further 4-5 mins (until just tender)

Add stilton, cream if you wish, and blend and season.
