- 150g of stilton
- 1 large head of broccoli
- 1 onion
- 1l of stock (veg)
- 1 large peeled, cubed potato
- optional - some soya/regular cream (depending on lactose tolerance)
5 ingredients, 20 minute lunch. Makes enough for 3-4. Ridiculously easy.
Soften the onion
add potatoes and stock, and simmer for about 10 mins (until potatoes are soft)
add broccoli and simmer for a further 4-5 mins (until just tender)
Add stilton, cream if you wish, and blend and season.
