- 2 large or 4 smaller sweet potatoes - roasted on hot (~200C) until 'tender', like an hour, ish. Let them cool down and then peel.
- 2 tsp ground cumin
- 2 small cloves garlic, chopped
- 1 tsp ground coriander
- 1 large handful fresh coriander, chopped
- 1/2 tbsp lemon juice
- 2 tbsp plain flour, plus extra if it's not glueing together very well
- bit of olive oil
- pinch of sesame seeds, if you're feeling posh, linseed if you're feeling SUPER FOOD HEALTHY
- ½ a small bunch spring onions
- 1 tsp salt, and later...
- 1 pack halloumi cheese , diced.
This is a combo of a few recipes in search of something nice I had in Orange Tree in Leicester. Vegetarian, vegan if you leave out the halloumi.
Ingredients: (Makes enough falafel or burgers for three hungry people or one GIANT PERSON).
Roast sweet potatoes are dead easy to peel
Smoosh all of the ingredients ‘cept the cheese together in a bowl, mash ’til pretty regular falafelly, can also use a blender, but smooshing is better.
Add flour until it’s the consistency you want – I like it squishy for good burger making, but for balled falafel add more flour to make the mixture stiffer.
After smooshy, add the halloumi. Leave out for veganists.
Shape into burgers and fry in olive oil.
Serve in a ciabatta style bread bun/bap/barm/cob with salad, and if you’re feeling super potatoe-y, some wedges. Nice with a sweet chili sauce (this is a pepper/chilli free recipe, though, as they make me ill – you could also add a couple of diced chillis for a spicier falafel), and a really big tomato. Om nomph.

@documentally Thanks :) forgot to add that the brown stuff is balsamic glaze… just in case you were worried it was HP sauce…
