Things that always go well together: olive oil, garlic, parsley and lemon zest. Add in some good greens and healthy nut fats, along with some wholegrain pasta and you have super tasty, super easy, reasonably quick, brilliant food for doing exercise on – especially if you’re veggie. Protein and fats in the cheese, oil and nuts, carbs and good grains in the wholewheat pasta, iron in the broccoli. This is higher in calories than I’d normally eat in a meal of my own making – just over 600, and you could probably cut it down by reducing the pasta (don’t reduce the fats, we’re all up on the evidence on lo-fat diets being useless for losing weight, right?), but as I’ve trained and run a marathon recently I’ve been looking for good energy and recovery meals. This is a brill one. And nice and easy to do with mates too. Original from the book Easy Vegetarian One-Pot. RECIPE:

Prep: 10 mins | Cook: 30 mins | Serves: 2
Nutritional info: 691 kcal, 74g carbs, 35g fat, 23g protein

INGREDIENTS PHOTO: (I forgot the parsley)

So, first up, stick the walnuts in an oven on around 180’c for 6-8 minutes, so they’re browning but not getting hard or bitter.

Then chop off about 2cm of the end of the broccoli – the dried up bit, and then slice the rest of the stalk right up to the florets, chop it up a little if massively thick. Then add the oil to a large frying pan, and gently sautee the stalk sections for about 5 minutes.

Then add the broccoli heads, and keep them cooking until tender. 5-8 minutes. MEANWHILE. squash and chop the garlic, chop the parsley, zest and juice the lemon, and probably take the walnuts out already.

By the time you’ve prepped all the stuff, the broccoli should be about tender. Add all of the stuff apart from the ricotta and lemon juice:

heat this through for 5 minutes, and put the pasta on.

Then add the ricotta and lemon juice, stir around and heat very gently until the pasta is ready. Season well. Really well. Lots of salt (I like salt, please make sure it’s to your taste).

When pasta is ready, drain, combine, serve, enjoy.

Aaaaaah, it’s been bloody AGES since my last recipe. Apologies. First I was finishing a PhD, then I was doing a residency where I was travelling to Yorkshire most weeks and cooking on the go, then I was POOR, and I couldn’t afford to experiment with food. And now I live in London. And am even poorer really, except the difference is I have less time because 2 hours of my day is commuting. But determined to get back on the food blog wagon. (WAGON). So expect a series of CHEAP EATS, for making in bulk and reheating for lunch or dinner. This week I have lentil chilli and this fine recipe; butternut squash and chickpea curry based pretty faithfully on a Good Food recipe. Served with rice in the evenings, or with a pitta for lunch.

Prep: 10 mins | Cook: 35 mins | Serves: 4

Nutritional Info: 393 kcalories, protein 14g, carbohydrate 71g, fat 8 g, saturated fat 1g, fibre 9g, sugar 16g, salt 0.94 g

NB I got this info off the recipe and I’m too tired to work out if it includes the rice or not, so when I record it, I just add on 50g of basmati rice, which brings the meal to: 571g kcalories, 110g carbs, 9g fat, 18g protein, 376mg sodium, 16g sugar.

Chop up the butternut squash. This is the worst bit of the recipe. From here on in it’s plain sailing. I chop squash the lazy way: slice off sections horizontally, so you have a load of cross section disks, then chop the skin off the sides with it laying flat, you end up with octagon-ish bits of just flesh, which then I section into chunks. Top Squash Tip.

Add the oil to the pan, heat, then add the squash and sautee until browning, about 10 mins

Then add the onion and the garlic, stir, and soften for 5-10 mins more

Add the curry paste, pop it on a high heat, and get it all lovely and covered and fragrant

Then add the stock, stir well, and simmer until squash is almost perfectly soft. Pop your rice on just as it’s getting soft-ish. About 5 minutes for basmati, and 10-15 for brown, before you think the squash is at almost.

Add the chickpeas and tomatoes (I used tinned), stir well, and simmer for a last 5 mins.

Just before serving, stir through chopped coriander. Serve with rice and soya yoghurt. Or pitta. Or naan. Or chapati. You get it.

This is called ‘risoniotto’ because chefs seem to think that to make us try new things they have to make them sound like old ones. From River Cottage Every Day this is Hugh F-W’s LIKE RISOTTO BUT MADE WITH PASTA NOT RICE. I’ll admit ‘risoniotto’ does have a bit more of a ring to it. Although I made it with orzo pasta. Waitrose basic ‘essentials’ range orzo pasta no less. BASICS. Oh brave fucked up world, that considers orzo pasta ‘essential’. What’s worse is I was glad to find it. Anyway. This is tasty, nice mix of creamy with the bite of the balsamic. Recommend. HOW TO:

First up, set a pan of salted water on the boil. Then pop the oil and butter in a pan, melt together, add the mushrooms and fry until brown and yummy.

Add the pasta about half way through browning mushrooms

Add the thyme, garlic and balsamic vinegar to the mushrooms, cook for a couple of minutes

When that’s reduced, add the wine and do the same

Then add the cream and half the parsely

reduce until nice and thick, and add the pasta when al dente, keep cooking until it’s… well, risotto texture. Damn.

Serve with the rest of the chopped parsley on to. It’s not half bad. And tastes lighter than risotto.

I always thought minestrone was a meat-y taste, and I didn’t have much hope for a veggie version (vegan, in fact), but, it turns out, TOTES WRONG. This was amazingly minestroney-y. Proper stuff. Might be to do with the marmite modification, but still, that brill mix of really substantial pasta and veg, protein from the chickpeas, and the slightly brothy watery stuff that is instant comfort-taste to me. highly recommend, this, and keeps throughout the week pretty well if you don’t mind slightly swollen spaghetti.

Ingredienty:

Prep: get the stock boiling. Chop the onion, cube the tomatoes, crush and chop the garlic, break up the spaghetti, drain the chick peas, chop up the beans into 1-2cm pieces.

Get a big pan, put the oil and onion in it. Soften the onion. I have illustrated this in case you are uncertain.

Add garlic. Fry for a couple of minutes more.

When the spaghetti is cooked, stir through the rocket. Season to taste. Serve.

ECONOMY DRIVE TIME. So a month into freelancing and it turns out unpredictable money is SCARY. Especially just before Christmas. The stuff it allows me to do is totally worth it, but I’m also starting to try and really reduce food spend. Just until I have some goddam reserves built up. So, enter a phase on Food That We Make of cheap things. But still tasty. Always tasty. First up, a super simple leek and cauliflower risotto. The rice, cauliflower and leeks all cheap cheap cheap. A little bit of cheese goes a long way, and cheap cooking wine will last a long while for it. I still didn’t scrimp on fresh parsley, though. It lifts the flavour too much to take out. So yeah, big amount, good flavour, very filling. My version makes the cauli quite smooshy, and I like the melty cauli style, but if you like your brassicas firm, then remove all stalkage and add with 15-20 minutes to go.

Serves: 4 | Prep Time: 10 mins | Cook time about 30-40 mins

weigh everything out, slice the leeks thinly, crush and chop the garlic, break the cauliflower into florets, taking off the thickest bit of the stalks. Set the stock on to boil. Heat the oil in a well big pan.

Add the garlic, leeks and cauli and soften over the heat for 5-10 mins

Add the risotto rice, stir through and cook for about 2 mins until the rice is slightly glossy

Add the wine, stir until absorbed

If you’re not in a mega rush like I was, add the stock a bit by bit until absorbed and the rice is al dente. If in a massive rush add it all and hope it’s the right amount. Reduce for about 2o-25 mins

When it’s reduced, add the butter and parmesan, stir through for a couple minute more

Then add the parsley, season to taste (loads of black pepper) and serve. Voila:

This is the first dhal that I’m properly proud of, just that right mix of bite and real creaminess that you can’t imagine is stil dairy-free. BUT IT IS. Imagine. Just. Imagine. Lentils are cheap, high in protein, filling, and ace, and the rest really livens the basic lentils + spices dhal mix. Originally a BBC Good Food recipe, but I’ve substantially changed the making process, and added garlic, and (if you ask me) the key ingredient of lemon juice. Seriously, taste it just before you add, and then as you add, try it and follow how much that simple little thing just lifts the flavour. I have no idea how it works but it just does. Yum. Let’s go, dhal:

Prep: 10 mins | Cook: 35 mins | Serves: 4
Nutritional Info: 350 kcals, protein 16.4g, carbohydrate 68.5g, fat 3.1 g, saturated fat 0.3g, fibre 8.3g, salt 2.66 g

Ingredients pic: missing garlic and lemon, 1 too many potatoes, 1 too few tomatoes, and 2 two few chillies, because I made those changes as I went along:

First off (I’ve spared you the picture) pop 1 tsp of sunflower oil in a pan over a med-low heat and soften the onion, garlic, and chillies together for 5 minutes or so. Then add the chopped tomatoes, garam masala and tumeric, and fry over a medium high heat for a couple of minutes, to get it fragrant and stuff.

Then add the stock and lentils, bring to the boil and simmer for 10 minutes.

Then add the sweet potato chunks, simmer for 15 minutes or until tender (but not completely mushy)

I decided to blend mine a bit, but only a bit, and I think this was a really good choice, leave some chunks, but just give it a whizz. A bit of mashing would work too, if you don’t have a hand blender.

Then add the spinach, stir through until wilted.

Season to fuck. Seriously. LOADS of salt. Taste it as you go, but that brings out the flavour. Then add the squeeze of half of or a whole lemon to taste.

And serve. Mmmm…

Does not contain gardeners. Contains gardened things. It’s basically Shepherd’s pie but without the meat. And tasty. Add the lentils in for a bit of bite and protein, but if you run out or something, it won’t ruin it. This was originally a BBC Good Food recipe, I think, but a bit low the first time I cooked it (and I don’t like adding flour to thicken things if I can avoid it), so I added some tweaks including thyme, a bit of marmite, better mash ingredients (follow them properly and it’ll be worth it) and a different manner of putting together. Perfect for this time of year with the nights drawing in, a proper cheap meal for one, or lots of people (it microwaves like a boss. By which I mean, well), can’t go wrong really. Here we go:

Serves: 4 | Prep: 5 mins | Cook: 35-40 mins

Nutrition: (I can’t imagine my tweaks have changed this too much) 241 kcalories, protein 9.7g, carbohydrate 39.6g, fat 6 g, saturated fat 1.6g, fibre 7.4g, salt 1.86 g

Ingredients pic: (I have been known to add a half a leek per person, too, works nicely)

add the oil to a pan and soften the onion and garlic

Then add the carrots, celery and parsnips, and continue to soften

when beginning to get tender, add the lentils, bay leaf, tomato puree, 3/4 of the stock, and a healthy dollop of marmite.

around about the same time, chunk your potatoes, put them into some salted water and start them off

the pie mix should be gently bubbling away, simmer for 25 minutes, or until lentils are tender. You can speed this recipe up by about 15 mins if you leave out the lentils, but they are worth it. Add more stock if it needs it. You want gloopy. Gloopy pie mix.

Just as the lentils are nearly cooked, hopefully your potatoes should be ready. Mash them.

To make the mash, once the potatoes are well cooked, drain, put about 1/2 a tsp of butter per person, a little seasoning, and a generous splash per person of alpro soya cream in (trust me on this, dairy consumers, its slightly vegetabley taste comes into its own in savoury dishes) and if you’re feeling posh a tiny bit of rosemary. Mash.

Then clean out that pan (or if you’re the kind of fancy person with more than 2 medium pans, just get a new one) and set some water on to boil ready for the green veg.

Hopefully your pie mix should be nice and thick now. Spoon it into a casserole dish.

And using a spoon and fork, very thinly spread the mashed potato on top, it never goes as far as you think, so be sparing to begin with. The technique I use is teaspoon of mash, and sort of spread it from the spoon onto the pie using the reverse of the fork. Leaves a nice texture, too.

Your water should be boiling now, chuck in the broccoli (and about 3 minutes later the green beans). Pop the gardener’s pie under the grill when you start the greens. Dunno what heat, mine just seems to have an ‘on’ or ‘off’ mode. Put it on ‘on’.

I totes have a gas oven now. I sort of haven’t gotten used to it yet. Much more unpredictable.

Anyway, all being well, veg and pie should be done at the same time. Drain the veg, serve with the pie which should be lovely and crispy on top. That’s it. Tasty, easy, cheap, vegan. Yes.

This is probably my favourite curry of the last five years. I get it from takeaways and restaurants all the time. (Regular visitors to this blog might have noticed that I like peas…) I’ve been trying to make this as tasty as a curry house in Birmingham I went to a couple of summers ago. I’m not there yet, but getting closer. So this is a combination of a couple of found recipes, plus some modifications.

Here’s what you need:

Chop the onion and the chilli (I left most of the seeds in, if you want less heat, take the seeds out), finely chop the ginger (I used about a quarter of the piece in the photo), crush the garlic.

Chop the paneer into chunks, and then fry in the oil until golden. Be careful to separate the paneer chunks as it goes into the pan.

Once they’re done, scoop out and set aside on kitchen roll:

Turn heat right down under the oil. Add the onion and chilli to the pan, and soften for 5 minutes. Add the ginger, garlic and the spices (or curry paste if you’d prefer). Fry for a further minute.

Add the tomatoes and stock, bring to the boil, then turn down to simmer. Mash the tomatoes down a bit if they’re too chunky (I use a potato masher):

Simmer for at least ten minutes, until quite thick – but not quite as thick as it needs to end up:

Add the peas and the paneer, cover and simmer for at least 5 minutes. If you can turn the heat right down and simmer for longer, then that’s better:

Uncover, and simmer for another 5 minutes – if needed – to thicken it up a bit more. Roughly chop the coriander and sprinkle over.

Serve with yoghurt and naan bread, and a medium – full bodied Portuguese red wine (preferably an Alentejo).

OK, you need this recipe in your life. Unless you’re a) vegan, or b) averse to goats’ cheese. Everyone else, you need this recipe in your life. Very simple. Very tasty. A carb-free version of lasagne. From the ‘200 Veggie Feasts’ book, I think. If you have a preffered tomato sauce method, feel free to experiment, a bit of onion, or a splash of red wine. You could also chuck in mushrooms to bulk it out if you want – I’d fry garlic & onions, add mushrooms (chestnut probably) until browning, then chuck in some red wine, reduce, then add tomatoes etc. and get back on track. Anyway, this is the simpler version. Try this before complicating it. Promise you’ll like it. If you’re not vegan and you like goats’ cheese. Oh and aubergine.

Using half the oil, soften the garlic, then add the tomato, basil, seasoning, and a pinch of sugar, simmer.

Meanwhile… season and brush the aubergine slices on both sides with the rest of the oil. I salt and pepper first, then brush with oil. You don’t need much oil, and that mean the season rubs in and sticks. Grill for 2-3 mins on a high heat on both sides

And now, layer up! Preheat the oven to 200’c, and layer 3 times with aubergine, tomato, parmesan and goats’ cheese, finishing with cheese, and sprinkling with a touch of oregano if you like. Bake for 2o-35 minutes until the cheese is browned and bubbly.

Serve with a good lot of peppery salad. Rocket is recommended, and a strong good tomato. One of the expensive kind. Enjoy!

Super simple brilliant veg stew, this, one of those vegan meals that inexplicably tastes meaty, might be the beans and paprika. Simple so long as you have a knife sharp enough to do butternut squash. Careful when you chop it, slippery veg, that. Anyway, that’s what adds to the prep time on this one, peeling an’ chopping that there squash. I’d be generous with the paprika if you just have regular stuff, and with the seasoning, too. Stupidly nice dinner with a big hunk of bread, or full enough to be a lunch on its own. TASTY. Original recipe by that HFW bloke in his ‘River Cottage Veg Everyday’ book.
