• 1 tbsp olive oil
  • 1 onion, chopped
  • 200g large, flat mushrooms, halved and thickly sliced
  • 1 tbsp tomato purée
  • 100ml red wine
  • 100ml vegetable stock, hot, made from 1/2 cube
  • Few fresh thyme leaves, plus extra to serve
  • 2 medium potatoes (approx 200g each)
  • 100ml soya milk or 50ml soya scream
  • 1 tbsp butter/soya alternative
  • 200g french beans

Oh my gosh this is tasty. Another super fast vegan dinner, I recommend making your mash with soya cream whether or not you’re vegan though. Best Thing. Very quick, warming, and perfect with green beans and mash. One of those simple and hearty meals that still manages to be impressive. Mm.

Ingredients!

Set your potatoes off at the very beginning, and chop them small, so they’re done in time

Soften the onion in the oil

Add the mushroom chunks and sweat until they’re just starting to get moist, about 5 mins.

Add the tomato puree, stir for 30 seconds and then add the wine and reduce by a half

Set your beans off (with water already boiling) now

Add the thyme and stock and simmer until the just before the beans are done, mash the mash,

drain the beans, spoon the mash onto the plate and cover with the AWESOME.
